Raw buckwheat pizza

I’m on day 8 of eating entirely raw and for whatever reason the usually all fruit, minimal veggie consumption just wasn’t cutting it today. I was ravaging! Add to the fact that my husband wanted me to make him one of my “famous” vegan (not raw) pizzas and I was practically crying. Haha.

This pizza was really easy to whip up despite its appearance! If you make it let me know how you liked it. 🙂

Crust recipe:

Serves 1

1/2 cup (soaked overnight & rinsed) buckwheat groats

1 cup cauliflower florets

2 cloves garlic

2 tsp oregano (dried, more for fresh!)

1 tsp onion powder

1/2 tsp salt

Juice of 1/2 lemon (optional)

Directions: Toss everything into a food processor and blend! Add more water for a softer crust and less water for a crunchy crust. The texture of mine was moist and crumbly. Dehydrate at 115 for 8 hours.

Sauce:

2 roma tomatoes

5 sundried tomatoes (soaked overnight)

5 fresh basil leaves

3 cloves garlic

1/2 tbsp maple syrup or raw agave

Pinch of red pepper flakes

Salt and pepper to taste

Directions: Put all ingredients into food processor and blend. Add to your pizza for the last couple of hours to warm up.

“Cheese” 

1 cup cauliflower florets

2 cloves garlic

1 tsp oregano

2 tbsp nutritional yeast

1/2 tsp salt

1/2 tsp onion powder

Juice of 1/2 lemon

Directions: Put all ingredients into food processor and blend. Add to your pizza for the last couple of hours to warm up.

Toppings:

Get creative! Or you can do what I did and just use what you have. 🙂

I used onion, shredded carrot, shredded broccoli, and broccoli leaves. I just left these raw.
